【皮料】
面粉250克、125-130毫升热水
【馅料】
A:鸡肉碎200克、蟹柳50克(剁碎)、酱青1汤匙、食油2汤匙、麻油1茶匙、鸡精粉1茶匙
B:青葱20克(切细)、韭菜20克(切细)、胡椒粉1⁄2茶匙、盐1⁄2 茶匙、昆布海苔酱2大匙
【蘸酱材料】
黑醋3汤匙、酱青1汤匙、昆布海苔酱2大匙、糖1茶匙、麻油1茶匙、蒜茸1茶匙、芫茜1⁄2 汤匙(剁碎)
【做法】
1.馅料做法:在一个碗内将所有馅料A捞匀,加入馅料B捞均匀,收入冰箱冷藏备用。(图1-2)
2.皮料做法:在大碗内将面粉加热水搅拌均匀,用手搓好成软面团。用布盖面休息30分钟。(图3)
3.蘸酱做法:小碗内将所有材料混合均匀。
【组合】
1.将面团分成30等份,搓圆杆平,包入1汤匙馅料,包好成饺子形。(图4-5)
2.把所有包好的饺子放入蒸笼里蒸6-8分钟。
3.将蒸好的饺子放入平底锅内,以少许油煎30秒或皮呈金黄色。(图6)
4.吃时沾蘸酱一起享用。
【Skin Ingredients 】
250g Plain Flour, 125-130 ml hot water
【Filling】
A:200 g Chicken Meat(minced), 50g crabstick (chopped), 1 tbsp light
soya sauce, 2 tbsp cooking oil, 1 tsp sesame oil, 1 tsp chicken stock granules
B:20g spring onions(sliced), 20g chives(sliced), 1⁄2 tsp pepper, 1⁄2 tsp salt ,2 heaped tbsps seaweed paste
【Sauce】
3 tbsp black vinegar, 1 tbsp light soya sauce, 2 tbsps seaweed paste, 1 tsp
sugar, 1 tsp sesame oil, 1 tsp chopped garlic, 1⁄2 tbsp coriander (chopped)
【Method】
1.To make filling: In a mixing bowl, combine filling ingredients A together.
Lastly add in filling ingredients B , mix well and refrigerate till required.(pic1-2)
2.To make skin: Place plain flour in a mixing bowl.Add hot water and mix with
a spatula. When dough is warm enough to handle, knead using your hands till
a soft and pillable dough is obtained. Cover with a wet towel and rest for 30
minutes.(pic 3)
3.To make sauce: In a small bowl, combine sauce ingredients together.
【Assemble】
1.Divide dough into 30 balls and roll out into thin flat rounds sheet, place a tbsp
of filling in the center and wrap the dumpling. (pic 4-5)
2. Steam in a single layer steamer tray over boiling water for 6 – 8 minutes.
3. Using a non-stick pan, heat cooking oil on medium heat, pan fry the dumpling
until the surface turns golden brown and crisp about 30 seconds.(pic 6)
4. Serve immediately with accompanying sauce.
